Updates as you typeSomeone coming to dinner coeliac, so strictly no gluten. The occasion: six people, Saturday dinner, want it to feel like an occasion. As a cook, I can follow a recipe. Plan a meal where the restriction is invisible, meaning everyone eats the same thing and nobody gets a sad separate plate. Give me: - A menu, with a line on why each dish works naturally without the thing they cannot eat. I would rather have food that never needed it than a substitute version of something else. - The cross-contamination points I need to know about, if that applies here. Be specific about which ones actually matter and which are overcautious. - What I can make the day before. - One question I should ask the guest before I shop, because restrictions vary and I would rather ask than assume. If any dish has a hidden source of the thing they avoid, say so. Those are the ones that catch people out.
What you get: A menu everyone eats, the hidden sources flagged, and the one question to ask before you shop.

Naturally free beats substituted
The instruction that changes the answer is asking for dishes that never needed the ingredient, rather than versions of dishes with it swapped out. A rice dish that happens to be gluten free is better than gluten free pasta, and models default to the substitute unless told otherwise.
It asks you to ask
Restrictions vary a lot between people, and severity matters. The prompt ends by producing one question for the guest rather than pretending it knows.
